Something
that is often over-looked in raw food preparation, as I’ve never
seen it mentioned, is the importance of sanitation when
preparing and eating raw foods. As you are not heating your
foods above 118 degrees, thereby preserving the enzymes, you are
also preserving the germs (bacteria, viruses, fungi, and
protozoa) as well. Even if you are buying organic produce, you
have no way of knowing who touched the vegetable or piece of
fruit you are about to consume before you bought it, and what
germs they may have transferred to that food. I can’t stress
enough how important it is to wash all of your fruits and
vegetables with a vegetable soap to kill all germs. There are
several good ones out there.
Also it
is better to buy your bulk foods from a wholesale source like
United Natural Foods where it is cheaper anyway,
rather than buy them from bins where people can reach their
hands in and contaminate the food. Even though the store may
provide disposable gloves or scoopers there are always going to
be those people who are too lazy to take the extra time to take
sanitary measures. I’ve seen it countless times.
