Mexican Salad
2½ cups
fresh corn
1 small
red onion, minced
1
jalapeno pepper, seeded & minced
1
tomato, chopped
1
avocado, chopped
½
cucumber, chopped
½ cup
zucchini, chopped
½ red
bell pepper, finely diced
3
scallions, chopped
1 cup sprouted Quinoa
1
tablespoon Celtic salt
1 cup
presoaked walnuts, chopped
2
tablespoons chives, finely minced
1
handful fresh pea and sunflower sprouts
¼ cup
cilantro, minced
3
tablespoons fresh squeezed lemon juice
3
tablespoons fresh squeezed lime juice
2
tablespoons olive oil
Mix
together first 9 ingredients with Celtic salt and let marinate for at least an
hour. Mix in rest of ingredients and enjoy!
