Cinnamon Rolls
 
DOUGH
3 cups almond soaked and drained
½ cup honey
½ cup ground flaxseed
1½ teaspoons cinnamon
2 tablespoons water
1 tablespoon powdered vanilla
2 tablespoons flax oil
 
FILLING/TOPPING
2 cups pecans or walnuts, chopped
½ cup honey
½ cup raisins
1 tablespoon cinnamon
1 teaspoon powdered vanilla
¼ teaspoon salt
 
FROSTING
1 cup cashews (soaked at least 8 hours) drained
½ cup honey
1 tablespoon powdered vanilla
1 tablespoon maple extract
¼ teaspoon salt
 
DOUGH
Place almonds in food processor with the s-blade and process until homogenized, then add each ingredient one at a time while blade is running.
 
Spread the dough onto some parchment paper and flatten to about a ¼ inch thick with a rolling pin.
 
FILLING/TOPPING
In a bowl mix together all of the filling ingredients. If your kitchen is cold you may need to place the honey on top of the dehydrator for a little while so it is not too hard.
 
Next spread a layer consisting ¾ of the filling onto the rectangular dough. Set aside the rest for the topping.
 
Using the parchment paper to help hold everything together, carefully roll the dough (long ways) tightly into a log. Place in the refrigerator for about an hour to chill.
 
Slice into ½-inch thick rounds and place in the dehydrator at 105 degrees for about 1/2 hour to warm.
 
ICING
Place cashews in food process and process for several minutes until completely homogenized. Add each of the remaining ingredients and process until well-blended. Spread icing on top of each round and sprinkle top with the remaining topping. Eat immediately.
 
Makes about 12-15
