Decadent Chocolate Mousse Pie
 
Crust
2 cups pecans, pre-soaked
2 ounces cacao powder
cup cacao nibs
1 tablespoon powdered vanilla
teaspoon salt
 
Filling
2 cups cashews, pre-soaked
2 large ripe avocados (be careful that they are not over ripe)
cup raw honey
1 cup refined coconut oil (Spectrum)*
2 ounces cacao butter
1 cup cacao powder
4 scoops stevia (KAL brand)
 
Optional Cream Topping
cup cashews, presoaked
cup raw honey
1 cups refined coconut oil (Spectrum)
2 tablespoons powdered vanilla
2 scoops stevia (KAL brand)
Pinch of salt
 
1-2 tablespoons raw cacao nibs, for decoration
 
Place all crust ingredients in a food processor with the s-blade and process until homogenized. Press the mixture into a 9-inch glass pie pan. Dehydrate for 4 hours.
 
Place cashews in food processor and process until completely homogenized. Add rest of filling ingredients, one at a time, to processor as it is running. Immediately pour the filling into the pie crust. Refrigerate until set (3-4 hours).
 
For the topping, process cashews first until smooth and creamy. Then add the rest of the ingredients as processor is running. Pour on top of filling once the filling has set up.
 
Sprinkle top with cacao nibs.
 
Makes 9-inch pie
 
* An unrefined coconut oil does not have with a strong coconut flavor so it won't affect the overall taste of the dish.
